Introduction

Sweet and spicy vegetarian stirfry. Can be served over rice, filling for a tortilla, or eaten by itself. Sweet and spicy vegetarian stirfry. Can be served over rice, filling for a tortilla, or eaten by itself.

Ingredients

    1 med Onion
    1 med Green Pepper
    2T Garlic, prepared
    1T Honey
    1T Coriander Powder
    1T Hot Chili Powder
    2T Ground Cumin
    2 Sweet Potatos, appx 5" long
    2 cups Black Beans, canned (I don't drain them)
    1.5 cup Yellow Sweet Corn, Frozen
    Spray Pam

Directions

Microwave your sweet potatoes 3-4 minutes, then cut into cubes.
Spray your skillet with pam & saute your diced onion, pepper & prepared garlic.
Add honey, coriander, chili pepper, and cumin.
Add black beans (not drained), corn and sweet potatos. Cook until sweet potatoes are cooked thoroughly but still firm (about 15 minutes).

    Wow!!! This was amazing!! I am glad we doubled it for left overs. Found that it is good either hot or cold!! We added chopped broccoli and served over fresh spinach and quac! Made it to my top 10 favorite list. - 11/6/12
