Ingredients

    1 1/2 C chopped onions
    3/4 C chopped red bell pepper
    3/4 C chopped green bell pepepr
    14.5 oz vegetable broth
    2 cans diced tomatoes and green chilies
    1 T chili powder
    1/2 C salsa
    1 t cumin
    3/4 t garlic powder
    1 can (15 oz) kidney beans rinsed and drained
    1 C fresh or frozen corn
    1 C (4oz) shredded 2% cheddar cheese

Directions

In a large saucepan, bring onions, peppers and broth to a boil. Reduce heat; cover and simmer for 5 minutes. Add tomatoes, salsa and seasonings; return to a boil. Reduce heat; simmer uncovered for 12-15 minutes. Add beans and corn; simmer 5 minutes longer or unti heated through.

Garnich with cheese.

Serves 4 (1 3/4 C per serving)
