Introduction

Quick meal for those of us who work long shifts and then cook for the family. Quick meal for those of us who work long shifts and then cook for the family.
Number of Servings: 6

Ingredients

    1 lb ground beef
    1/2 cup chopped onion
    5 garlic cloves, chopped
    6 cups beef broth, low sodium
    14 oz can diced tomatoes
    1 teaspoon dried thyme
    14 oz can italian green beans, drained
    14 oz can white beans, drained
    parmesan cheese, grated

Directions

Crumble ground beef into soup pot and brown over medium heat. Add onion and garlic, cook till soft. Add the rest of the ingredients. Simmer over low for 30 minutes. Ladle into soup bowls. Sprinkle with parmesan cheese.
Makes 6 servings.
Cabbage is a great substitution for the green beans.
