Introduction
Breakfast burrito made with southwestern egg beaters, mild pork sausge and reduced fat cheddar cheese. Excellent for people who like the McDonalds Breakfast burrito but need to watch cholesterol or sodium. This has less fat and more protien as well. Ingredients

1 120z roll of HyVee Mild Spice Pork Sausage (or sausage of choice)
1 container of Southwestern Egg Beaters
3/4 cup reduced fat shredded cheddar cheese
12 tortillas
Directions
Brown and drain sausage. Set aside on a paper lined plate to drain further.
Pour egg beaters into pan, cook through. Add the sausage back in and combine.
Measure 1/4 servings of sausage and egg mixture and place in 1 tortilla. Sprinkle a tsp or so of cheese (portioning out the 3/4 cup of cheese between the 12 torillas) on and roll. Repeat until all tortillas are used.
I wrap in parchment paper and either then wrap in foil or put in a sandwich baggie to freeze.
Reheat in microwave for 1 minute. *remove foil!
I also like to warm my tortillas before hand in order to help with the rolling. They do not break or crumble when they are warmed.
