Introduction

Ingredients

    4 bonesless, skinless chicken breasts
    1 package Lipton Garlic & Herb dry soup mix
    1.5 tomatoes, coarsely chopped
    8 ounces (half package) Hodgson Mill Whole Wheat Rotini
    1 table spoon olive oil
    1/3 cup water
    Part skim mozzarella cheese
    1/4 cup reduced fat parmesan cheese

Directions

Preheat oven to 400 degrees.
Place chicken in a 9x13 pan or casserole dish.
Chop tomatoes and place over chicken.
Mix water, oil and soup mix and pour over chicken and tomatoes.
Bake for 30 minutes.
Remove from oven and put both cheese over chicken and bake an additional 5 minutes or until cheese is melted.

Cook pasta according to package directions, minus salt.

Put chicken over pasta and serve.

Each breast equals 2 servings.

    This is a great recipe! To give it a little more flavor, I baked it with mushrooms and asparagus too. The final products was amazing! I even got my husband to eat it (and enjoy it) which is rare with healthy recipes :) - 4/15/12
