Ingredients

    2 tbs olive oil
    3 lb boneless, skinless chicken breast, diced
    1 large onion, chopped
    1 large green pepper, chopped
    3 tbs garlic, chopped
    2 c picante sauce
    2 c chicken broth
    1 can black beans, drained
    1 can corn, drained
    1 1/2 c rice, whole grain, dry

Directions

Heat oil. Cook chicken, onion, peppers and garlic. Add remaining ingredients. Cook until rice is done - approximately 20 minutes depending on type of rice. Yield 10 1-cup servings.
