Ingredients

    6 large banana peppers
    2 C. Sharp Cheddar Cheese
    1 plum OR roma tomato, diced finely
    6 T. onion, diced finely
    6 T. green pepper, diced finely
    1/8 tsp crushed red pepper
    1/8 tsp salt
    1/8 tsp pepper
    6 slices low sodium bacon

Directions

Cut a slit lengthwise in each banana pepper. cutting to, but not through, other side. Remove seeds.

Combine sheese and next 6 ingredients. Spoon mixture evenly into each pepper, and wrap each with a bacon slice; secure with wooden picks. Place peppers on a broiler pan.

Broil 5 1/2 inches from heat on low for 4 or 5 minutes on each side or until golden.

Makes 6 servings--one banana pepper each.

    Very Good
    I received this recipe through my CSA on the week we received fresh banana peppers. In my recipe the crushed red peppers were replaced with 2 diced jalapeno peppers. It also called for 2 slices of bacon to wrap the banana peppers. The recipe tasted very good - definitely worth the bacon calories! - 7/19/10
