I've given my Grandma Loretta's German Potato Salad an extreme makeover. This recipe is nutricianally healthier and portion controlled. Ingredients

    5 potatoes, peeled and diced
    1 cup carrots, peeled and diced
    1 lb. turkey bacon, raw and diced
    1 medium onions, diced
    3 stalks celery, diced
    1/2 cups vinegar
    1/2 cups sugar
    1 cups Water, cold
    1 T Salt
    1 T Pepper

Directions

Peel and dice potatoes and carrots. In large pot, boil till tender, drain and set aside. In same pot, fry chopped turkey bacon till crisp, drain grease. Add onion and celery and cook till tender. Combine vinegar, sugar, starch and water; add to pot and boil till thick. Add potatoes and carrots, stir, and simmer for 10 minutes
