Introduction

Ingredients
-
-2 lbs. red potatoes thinly sliced
-4 oz 1/3 less fat cream cheese
-3/4 C fat free evaporated milk
-2 small or 1 large cloves minced
-1 t dried chives
-1 t dried parsley
-1/4 t black pepper
-1/8 t salt
-2 T grated parmesan
-3/4 C fat free chicken broth like Aldi's Fit n Active
-1 C 2 % milk mozzarella cheese shredded
Directions
--Wash then thinly slice the potatoes. Layer them in a lightly sprayed 9 x 13 glass casserole dish evenly.
--Pour the 3/4 chicken broth over the potatoes.
--In a medium sauce pan heat the cubed cream cheese, evaporated milk, garlic, spices and parmesan cheese. Stir over low/med heat until cream cheese is nice and creamy then pour evenly over the potatoes. Cover with foil and cook at 350 degrees for 45 minutes.
--Remove the foil, sprinkle the mozzarella cheese over the top and cook another 10-15 minutes or until potatoes are tender.
--Makes 10 servings.
