Ingredients

    Sauce:
    2 shallots, peeled and quartered
    1 clove garlic
    1/2 lemon, juiced
    1 tablespoon horseradish mustard
    pinch cayenne pepper
    1 tablespoon olive oil mayonnaise

    2 teaspoons canola or olive oil
    1 teaspoon no-salt added Cajun seasoning
    12 medium shrimp, peeled and deveined

    1/2 loaf (5 oz) whole-wheat or multigrain baguette, sliced 1/2-inch thick and toasted
    1 cup baby arugula

Tips

If you prefer not to deal with the shrimp tails while eating, you can remove them and chop the shrimp, then mix with the sauce.

For perfect slices, use a serrated knife for the bread.


Directions

Prepare the sauce by pureeing all ingredients together in a blender.

Place a medium skillet over medium-high heat, then add the oil and the Cajun seasonings. Add the shrimp to the hot pan, and cook, stirring often, until the shrimp are opaque and the tails curl toward the heads, about two minutes.

Remove the shrimp from heat.

Spread each slice of bread with one teaspoon sauce, then top with a few leaves of arugula. Top with one shrimp.
