Introduction

Tasty eggs and vegetables in a quick and easy delicious dish; great for brunch, lunch or a light dinner. Tasty eggs and vegetables in a quick and easy delicious dish; great for brunch, lunch or a light dinner.

Ingredients

    1 onion, chopped
    1 tbsp olive or rice bran oil
    10 oz frozen mixed veges
    1/2 cup bean sprouts
    6 medium eggs
    1/2 cup non-fat milk
    2 oz edam cheese, grated
    salt and pepper

Directions

Heat oil and cook chopped onion until soft but not brown. Pre-cook mixed veges according to instructions (I use the microwave), and add to the pan. Add bean sprouts to pan. Add salt and pepper to taste. Whisk eggs and milk together and add to pan. Turn heat down and cover for 5-10 minutes until eggs set. Sprinkle cheese on top. Place pan under the grill to brown the top. Cut into quarters to serve 4 people.
