Introduction

My mom and I both are dairy-free, but I was really craving some pesto, so I decided to just try it without the parmeggiano. My mom and I both are dairy-free, but I was really craving some pesto, so I decided to just try it without the parmeggiano.

Ingredients

    3 oz. Fresh Basil
2 Tbsp Extra Virgin Olive Oil
    3/4 c Raw Pine Nuts
    6 cloves garlic
3 t sea salt (or to taste)

Directions

In a food processor, finely chop the pine nuts. Remove the pine nuts from the processor and set aside.

Remove all of the stems from the basil. In a food processor, finely chop the basil. Add olive oil, pine nuts, garlic, and salt. Process until mixed consistently.

We divide up the pesto in a ice cube tray and freeze until we are ready to use. Yield about 8 ice cube shaped pieces. (I typically use 2-3 for one package of cooked and drained spaghetti.)
