Introduction
Essentially invented as a leftover soup with lentils for bulk. The chorizo, the original ingredient I needed to use up, adds a richness and a meatiness to the earthy lentils. You can jazz it up with whatever spices or veg you have to hand. Ingredients

1tbsp olive oil
1/2 large onion, chopped
2 medium carrots,chopped
200g puy lentils
100g chorizo, chopped
chicken/vegetable stock or water
Directions
fry onion until soft, then add chorizo and fry. Add the rest of the ingredients and simmer for 30minutes.
