Introduction

This recipe is super easy. Got the idea from the recipe "Super Easy Pumpkin Muffins." I just made a separate recipe to get the nutritionals. This recipe is super easy. Got the idea from the recipe "Super Easy Pumpkin Muffins." I just made a separate recipe to get the nutritionals.

Ingredients

    Muffin mix:
    1 box spice cake mix
    1 can pure pumpkin
    1/4 c apple cider

    Topping:
    2 T butter or spread of choice
    3 T finely chopped pecans
    3/4 tsp cinnamon
    3 T sugar
    3 T brown sugar
    3 T flour

Directions

In a large mixing bowl, combine cake mix and canned pumpkin, stirring till all lumps are broken up and well-mixed. Stir in apple cider. Spray a muffin pan with pam or line with liners sprayed with pam. Fill each cup about 2/3 full.

In a small mixing bowl, combine flour, sugar, brown sugar, cinnamon and pecans. Cut in butter till mixture is made of tiny clumps, making sure all dry mixture has been combined with the butter. Sprinkle mixture on top of muffin batter and bake at 350 degrees for 20-25 min.
