Ingredients
Ingredients:
Onions, raw, 1 cup, chopped
Garlic, 4 cloves
Red Ripe Tomatoes, 4 Italian quartered
Chayote Squash, 1 serving , peeled and cubed
Spinach, fresh, 2 bunch chopped
White Rice (may sub brown rice) medium grain, 3 cup cooked
Water, bottled, 6 cups
Carrots, raw, 3 medium
3 Jalepeno peppers chopped and seeded
3 small dried red chili peppers (chopped fine)
Beef ribs, 1 lb (boneless and trim fat.) cubed
Salt and Pepper to taste
Directions
Prepare Rice
Brown Beef in 2 Tbsp Olive Oil.
Season with salt and pepper to taste.
Drain excess fat
Rinse and chop all vegetables.
Place vegetables and beef in soup pot.
Add enough water to cover veggies and beef plus
1 inch higher. Season with salt and pepper to taste. Cook until all veggies and beef are tender,
(approx 45-60 min)
Fill bowls with soup and a scoop of rice.
