Introduction

This is a great tasting dish, that uses items people generally already have in their pantry! I usually eat this on its own with an additional side of veggies, but you could also serve with a slice of dark bread and a salad.

Number of Servings: 6

Ingredients

    3 cups Chicken Broth
    3/4 cup Lentils
    1/2 cup Brown Rice
    3/4 cup Onions, Chopped
    1 tsp Italian Seasoning
    1/2 tsp Garlic Powder
    1 cup Grated Cheddar Cheese

Directions

1. Preheat oven to 300 degrees.
2. Mix all ingredients, except cheese, in a baking dish (9x9 or 11x7)
3. Cover with foil and bake in preheated oven for 1 hour 10 minutes.
4. Remove the foil, add the cheese on top, and bake for an additional 20 minutes.

Makes 4-6 servings.
