Number of Servings: 4

Ingredients

    Honey Suckle White 99% Fat Free Ground Turkey Breast, 16 oz
    Eggplant, fresh, 1 eggplant
    Chopped Fresh Parsley, 2 tbsp
    Chopped Garlic, 3 cloves
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Soy Sauce (low sodium), 1 tbsp
    Liquid Smoke, 1 tsp

Directions

slice (inch thick) and grill egg plant on the george foreman grill. pull off skin and finely chop or blend pulp into a thick salsa consistency. combine all ingredients together and make 4 patties. grill and enjoy!
i add those thin whole wheat buns, spinach or lettuce and maybe some mustard. (not in calculations) just like a regular burger! YUM! the eggplant keeps it moist!

    I'm a meat lover. Red meat that is, and this ground turkey burger infused with eggplant was DIVINE! - 11/16/10
