Ingredients

    2 pounds of lean ground beef
    1 can of black beans
    3 cups of enchilada sauce
    18 corn tortillas
    1 cup of chopped onion
    1 cup of light sour cream
    5 cups of colby & monterey jack cheese

Directions

preheat oven to 350.

brown ground beef with onions & drain off fat. drain the can of black beans. put ground beef, onions & beans in a bowl together. set aside. measure out cheese. use fat free cooking spray to coat bottom of 9x13 pan (I use a glass dish). dip 6 corn tortillas completely covering each one to line the bottom of the pan. then put half the meat mixture & half of the cheese. put another layer of 6 corn tortillas. put the rest of the meat mixture & remaining cheese. layer the last 6 corn tortillas. take the remaining enchilada sauce & mix with the light sour cream & pour over the top of dish. bake for 30 minutes or until heated throughly.

    Very Good
    I switched the corn tortillas for flour tortillas. They get soggier, but the corn flavor makes it taste funny, in my opinion. Otherwise, GREAT! - 9/9/07
