Ingredients

    1 1/4 c. buttermilk
    1/4 cup honey
    2 T vegetable oil
    1 1/2 c. old fashioned oats
    3 c. unbleached white flour
    1/2 c. whole wheat flour
    1 1/2 tsp salt
    1 tsp baking soda
    1 tsp baking powder
    1 c diced dried apricots

Directions

Preheat oven to 400. Sprinkle baking pan with cornmeal.
Whisk buttermilk, molasses & oil in medium bowl. Stir in oats. Set aside.
Mix next 6 ingredients in large bowl. Make well in center. Add buttermilk mixture & raisins. Stir until dough comes together. Let stand 5 minutes.
Lightly flour work surface. Scoop half of dough onto surface. Knead about 30 seconds until no longer sticky. Shape into ball.
Bake loaves 20 minutes. Reduce heat to 375. Bake until dark & crusty & loaves sound hollow when tapped on bottom, about 25 minutes. Cool on racks.

    Very Good
    It was very good and healthy. My mother in law always made soda Bread for St. Patricks day. Even the pessimist, oh does this have wheat flour loved it. I'm making my second batch today.

    Note: I used chobani plain non-fat yogurt, and milk in place of the buttermilk, the liquid ratio seemed low so
