Introduction

A light version of Fettuccine Alfredo (originally from Cooking Light, with slight modification) A light version of Fettuccine Alfredo (originally from Cooking Light, with slight modification)
Number of Servings: 4

Ingredients

    6 oz uncooked Fettuccine
    1 12 oz Salmon fillet
    1 cup Parmesan cheese
    2 tablespoons light cream cheese
    2 teaspoons margarine
    1 tablespoon flour
    1 cup 1% milk
    2 cloves garlic

Directions

Makes 4 - 5 servings
Place salmon in a steamer basket and steam until done (readily flakes, no raw meat)
dice 2 cloves garlic and saute for 1 min in margarine
add 2 tsp - 1 tablespoon of flour and saute for 4 minutes
slowly add milk and whisk until mixed well. cook until thickened and bubbly (about 8 minutes)
Add parmesan cheese and mix until melted
At same time as above, cook 6 oz of fettuccine according to package directions and drain
Toss alfredo sauce with pasta in a large bowl. Flake and add salmon and toss.
