Ingredients

4 zucchinis
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1/2 lb. (225g) lean ground beef
1 tomato, seeded and chopped
To taste salt and pepper
2 tsp dried parsley
2 tsp. dried oregano
2 tsp dried basil
3/4 grated cheddar
3 tbsp breadcrumbs
3 tbsp grated Parmesan
Directions
Preheat oven to 350F,
Cut zucchini in two length-ways. Scoop out flesh with a spoon; chop and set aside.
in a skillet, heat oil and cook onion and garlic. Add ground beef and cook thoroughly.
Stir in reserved chopped zucchini, tomato and seasonings and continue cooking for 2 min. Mix in half the cheddar.
Place zucchini boats in a shallow baking dish and stuff with beef mixture.
In a bowl, mix breadcrumbs, Parmesan and remaining cheddar together and sprinkle on to of the zucchinis.
Bake 20 minutes or until cooked through.
