Ingredients

    1 pound of cod (cut into 4 oz pieces)
    3 cloves of garlic, minced
    1/2 TBS I Can't Believe It' s Not Butter
    1 TBS Olive Oil
    Juice of 1 lemon
    2 TBS chopped flat leaf parsley

Directions

Preheat oven to 350 degrees F.

Place fish in a baking dish large enough to hold the fish in one layer. Season fish with a little sea salt and freshly ground black pepper.

Place margarine and olive oil in a small nonstick skillet and sauté the garlic on medium low heat for 1 minute. Add lemon and parsley. Drizzle mixture over top of fish. Bake until the fish flakes easily with a fork for about 12 to 14 minutes.

    Really quite good! Very lemony and garlicy. My boys liked it. You do need a firm fish for this one. I used Flounder and the liquid consumed it, but it still was very tasty. Cod is awesome and Ahi would be fabulous! - 7/30/13
