These are a great tasting low calorie snack.These muffins are not only low in calories but they are low in sugar with 3.1 grams of sugar in eachone.If you would rather use 1 Cup Of splenda and 1 cup of Sugar the calories per muffin end up being 213.

Ingredients

3 Eggs
2 Cups Sugar Using Splenda
1 Cup no sugar added Applesauce
1/2 tsp Salt
2 cups Peeled and Grated Raw Zucchini Squash
3 cups Flour
3 tbsp Cinnamon
1 tsp Baking Soda
3 tsp Vanilla
Directions
Beat 3 Eggs, add 2 cups splenda, 1 cup applesauce, 1/2 tsp salt Beat well. Add 2 cups grated raw Zucchini Squash (you can peel it if you don't like the green specks.)
Sift in 3 cups flour, 3 tbsp Cinnamon, 1 tsp Baking Soda.
Add to squash mixture and beat well.
Add 3 tsp Vanilla, Beat, Fill to top of a 12 muffin pan. Bake @ 350 for 35 minutes or until toothpick inserted near center comes out clean.
Makes 12 muffins.
