Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 large chopped
    Celery, raw, 1 stalk, chopped
    Peppers, red, bell, seeded and chopped
    Garlic, 1 clove minced
    Veggie broth 3 cups
    Vegetable Juice Cocktail 2 cups (Or tomato juice) low sodium
    Canned Tomatoes, 1 can chopped
    Zucchini, 2 medium, halved and sliced
    Thyme, dried, 1 tsp
    Hot sauce - or tabasco, 1 tsp
    Liquid Smoke Marinade, 1 tsp
    Salt, to taste
    Pepper, black, to taste
    File powder if you can get it, 1tsp

Directions

heat oil in pan, add onion, celery, pepper garlic and cover, cook till soft around 5 minutes.
Transfer to 4-6 quart slowcooker add stock, tomato juice, tomatoes, zucchini, file powder and thyme. Season and cover, cook in slow cooker for 8 hours on low.
Just before serving stir in hot sauce, and liquid smoke. Adjust seasoning to taste. Serve over rice.
