Ingredients

    2 lg sweet potatoes, peeled and cut into bite-size pieces
    1/4c olive oil
    salt/pepper
    2 thick slices bacon
    1 red bell pepper, cored and chopped
    1 small red onion, halved and thinly sliced
    1 T peeled, minced fresh ginger
    1t ground cumin
    juice from orange (juice from fresh)
    1lb fresh spinach leaves

Directions

Heat oven to 400*. Put the sweet potatoes on a baking sheet, drizzle with 2 T of oil , sprinkle with salt/pepper . Roast turning occasionally until crisp and brown about 30 mins. remove and keep on till ready to use.
Make dressing, cook bacon till crisp & remove. Drain on paper towel leaving darken bits, add rest of oil, pepper, onion and ginger to pan. Cook until no longer raw , then add cumin and bacon. stir in juice and turn off heat. Put spinach in large bowl, add sweet potatoes and warm dressing and toss. taste and adjust seasonings.
