Introduction
Pho is a Vietnamese soup, usually made with boiling beef broth that is poured over various meats and vegetables. This is a non-authentic vegetarian broth that I use instead of beef. It is spicy, and very flavorful with virtually no calories. Pour over raw veggies, add some fresh basil, beansprouts and some tofu for a delicious vegetarian meal. Ingredients

2 cups water
1 clove of garlic, sliced
1 inch of ginger, sliced
1 tsp Soy sauce (tamari)
1 Tbsp rice vinegar (unseasoned)
1 tsp Fish Sauce (optional - add a bit more soy sauce if not using)
0.5 tsp Sambal Olek (hot pepper paste)
Directions
Combine all ingredients (omit fish sauce if you're vegetarian) and set to boil for 10 minutes, covered. I chop my veggies and prep the tofu while it's boiling. Then remove garlic and ginger slices and pour over chopped veggies, wait 5 minutes and enjoy!
