Introduction

Ingredients

    2 large pork loin chops, approx. 10 oz. raw weight, fat removed
    freshly ground pepper
    .75 c. water
    1 c. chopped onion
    .25 head red cabbage, cut in thin wedges
    1 c. yam cut into large chunks
    1 small apple, cut in wedges
    1 T. cider vinegar
    4 gingersnaps

Directions

Brown pork chops well in a non-stick pan with a cover. Season wtih pepper. Add water and vegetables. Cover and turn down heat to simmer, Simmer for approximately 25 minutes, checking to be sure it does not boil dry. When vegetables and meat are cooked, remover them from the pan and keep warm. Add vinegar and gingersnaps to the pan and dissolve gingersnaps, stirring well. If you browned the chops well, the sauce will be dark reddish brown. The gingersnaps will thicken the sauce. Pour the sauce over meat and vegetables and serve. Serves 2, one large pork chop and two cups vegetables each.

    Very Good
    I loved this easy one-dish meal (except for my decision to bake the ginger snaps instead of running out to the store for some), but hubby found it a little sweet for his taste. I'll make it again, but may try to make it more savory or add extra vinegar, to please his palate. - 2/21/11
