Introduction

Low sodium, vegetarian and spicy! Low sodium, vegetarian and spicy!

Ingredients

    2 large garlic, minced
    1 large onion, chopped
    1 sweet red pepper, chopped
    2 medium raw potatoes, cubed
    *5-6 frozen spinach cubes
    1 Can blue menu chickpeas(no salt)
    1.5 Tbsp curry
    .5 Tbsp cumin
    .5 tsp cinnamon
    1/2 Tbsp ground ginger
    1/4 tsp cayenne
    2 cups water
    1/2 cup soy milk(Natura unsweetened)
    1 low sodium broth cube(GoBio low sodium vegetable bouillon cube)

    *spinach cubes come frozen in little 'pucks', or use approx. 2-3 cups fresh spinach and add at the end, and simmer until wilted.

Directions

Saute onion, garlic & red pepper for about 5 minutes. Add spices and saute another couple of minutes, stirring periodically to prevent sticking.
Add water, chickpeas, broth cube & potatoes and simmer about 15 minutes.
Add spinach and soy milk and simmer about 5 minutes until potatoes are soft.

Makes approx. 4 - 1 Cup servings
