Introduction

I threw this together 2 nights before Thanksgiving with what I had on had at home. If I had planned to make this I would have added more veggies. I served it with warmed tortillas. Ingredients

    1 pound of Boneless Skinless Chicken Breasts.
    1 pouch of Taco Seasoning (I used Taco Bell because it was what I had)
    1 Can of Corn (drained)
    1 Can of Kidney Beans (well drained)
    1 (16oz) Jar of Salsa
    1 larger onion chopped
    1-2 Jalapeņos chopped (optional, not included in calorie count)
    1-2 Bell Peppers, chopped (optional, not included in calorie count)
    Sour Cream or Cheese (optional, not included in calorie count)

Directions

1. Cut Chicken in to bit size pieces, place in bottom of crock pot/slow cooker.

2. Sprinkle Taco seasoning over Chicken, stir to count each piece

3. Pour Jar of salsa over chicken.

4. Add canned corn (or frozen corn)

5. Add Kidney or black beans (I used Kidney)

5. Chop up 1 large onion ( I actually used 4 very small onions but it was just what I had)

6. Add any other vegetables you want to add such as jalapeņos or bell peppers.

7. Stir everything together, cover and cook on high for 3 hours. Or until chicken is fully cooked.

8. Add in Sour Cream and/or cheese 15-30 minutes before serving.

Makes 8-10 servings depending on if your using it as your whole meal or just as a main course.
