Ingredients

8 oz. Fat Free Sour Cream
1 can sliced water chestnuts, drained
1 can 98% Fat Free Cream of Mushroom Soup
1 can 98% Fat Free Cream of Chicken Soup
1 package of Reduced Fat Keebler Club Crackers (3 packages are in 1 box; only use 1 package)
1-1.5 lb. skinless boneless chicken breast
8 Tbsp (1 stick) I Can't Believe It's Not Butter
Directions
Preheat oven to 350 degrees.
1.) Cut chicken into bite-size pieces and cook on medium in large frying pan with garlic until a small amount of pink is visible in the center of chicken. (Don't overcook because the chicken will continue to cook while the casserole is baking.)
2.) Drain chicken and transfer chicken to a large glass bowl.
3.) Stir in soups, water chestnuts and sour cream with chicken.
4.) In gallon size bag, pour in package of crackers, seal bag shut and crunch crackers into crumbs.
5.) Melt butter in microwave safe dish and pour butter into bag with cracker crumbs. Shake bag well so that the butter coats the crackers evenly.
6.) Pour crackers into baking dish and press crackers into dish to form a crust.
7.) Pour chicken mixture on top of cracker crust.
8.) Cook on 350 for 25-35 minutes until casserole begins to bubble.
