Introduction

These are pretty good! A pretty large portioned decadent dessert for under 200 calories, & only 1 gram of fat, with 9 grams of fiber and 16 grams of protein. The blueberry topping with fiber one sprinkles also works well on top of vanilla frozen yogurt, if you can add the sugar & calories to your plan. These are pretty good! Ingredients

    2 6 oz cups vanilla greek yogurt
    7 packets stevia
    1 cup frozen blueberries (left frozen- do not thaw)
    1 tbsp corn starch
    1/2 c original fiber one cereal
    4 tbsp cool whip free

Directions

Put blueberries into a microwave safe bowl that has been sprayed with zero fat/cal cooking spray, add 3 stevia packets & 1 tsp corn starch. Stir together well, and then microwave on high for 3- 4/12 minutes, until the blueberries take on a blueberry pie filling consistency. Refrigerate until chilled (1-2 hours) Mix 2 packets of stevia with each of the vanilla yogurt cups (4 packets total between the 2 cups), and stir until creamy. Divide one 6 oz yogurt cup between 2 parfait glasses. Layer 1/4 c blueberry mixture on each parfait & then sprinkle on 2 tbsp fiber one in each glass. Divide second 6 oz yogurt cup between each parfait, followed by 1/4 c blueberry mixture, and 2 tbsp fiber one. Finish each parfait with 2 tbsp cool whip free on top, and ENJOY!
