Ingredients

    2 medium courgette/Zucchinis sliced
    1 tbsp oil
    1 small onion chopped
    2 eggs
    0.5 tsp paprika
    0.5 cup/mug cheddar cheese

Directions

Serves 2

1-Preheat the oven to 170C/325F/Gas Mark 5. Grease a small casserole dish.

2-Fry the courgettes/Zucchini in a frying pan. Transfer to the dish.

3-Fry the onions until they brown. Add to the casserole dish.

4-Beat eggs and add paprika. Pour over the other ingredients. Sprinkle over the cheese and then bake in oven for 25-30 minutes.
