Introduction

I've tried a lot of variations on Mock Hollandaise and this is the best one I've found yet. It's creamy, it doesn't curdle, and reheats perfectly. This recipe can be easily doubled. Ingredients

    1/3 cup reduced fat buttermilk
    1/3 cup Olive Oil Mayo (or canola oil mayo)
    1/2 tsp fresh grated lemon rind (about 1 small lemon)
    1 tbsp lemon juice
    1 1/2 tsp dijon mustard
    1/4 tsp ground black pepper
    1 1/2 tsp unsalted butter

Directions

Combine the first 6 ingredients (through pepper) in a small saucepan over low heat, stirring well with a whisk. Add butter, whisking until it melts. Keep warm.

Makes 5 (3 tbsp) servings
