Ingredients

    1 cup brown rice, rinsed and drained
    1 cup canned sauerkraut, rinsed, drained and finely chopped
    1 cup chopped onion
    1 (6 oz) can tomato paste
    3 1/8 cup water, divided
    1 Tbsp Splenda for Baking
    2 Tbsp ketchup
    2 Tbsp finely chopped bell pepper
    2 lbs boneless, skinless chicken breasts, cubed
    1/2 tsp celery salt
    1/2 tsp paprika
    1/2 tsp garlic powder
    dash of ground pepper

Directions

Preheat oven to 350F. Lightly spray a 3 quart casserole dish with nonstick cooking spray. Add the rice through chopped bell pepper.

Heat a large skillet over medium-high heat. Add the chicken adn sprinkle with the celery salt, paprika, garlic powder and pepper. Cook until just browned. Add to the casserole. Stir to combine.

Cover and bake in preheated oven for 1 1/2 to 1 hour 50 minutes, until the chicken is tender and the rice is cooked.

Makes 8 (1 1/2-cup) servings.
