Introduction

I baked the pumpkin in advance, you may use canned pumpkin. I don't know if it will change the calories. The crust isn't tightly packed because I wanted to use as little butter as possable. Ingredients

    2 C. Prairie farms Skim Milk
    2 Boxes Jello Sugar Free Pudding
    2 C. Mashed Pumpkin
    Dash of Ginger, Cloves, All Spice.
    1 tsp. Cinnamon
    1 tsp. Vanilla

    10 Graham Crackers
    1 TBSP Country Crock with Calcium
    1 tsp Canola Oil

Directions

Melt butter in microwave, then add tsp. of canola Oil. Sit aside. Crush Graham crackers as fine as possible. Pack together butter mixture with graham crackers, pressing into bottom of pie pan.

Beat milk and pudding for 1 minute, then add spices if you like and pumpkin. Blend another minute or two until it gets thick. Pour into pie pan and put in fridge for 1 hour.

This would also be good with out the crust, or try with sugar free coo whip.

    Incredible!
    Very easy! Fit perfectly in my Keebler low fat graham cracker crust! Most successful first-time pie I've ever done. It's on the Christmas menu. - 11/22/07
