Introduction

Ingredients

    2 T Olive Oil
    1/2 c Onions - chopped
    1/4 c Celery - chopped
    1/4 c Bell Pepper - chopped
    1t garlic -chopped
    1.5 c - Sweet Potato in 1/2 inch cubes
    1lb cooked turkey breast cubed
    2 c - 99% fat free chicken stock
    2.5 teaspoon thyme
    Optional (not included in nutritional info)
    1/4 c dried cranberries
    poached egg

Directions

Saurte onions in oil for about 3 minutes until turning soft. Add celery, pepper, thyme and garlic and saute about 5 minutes. Add Sweet Potato and saute for 5 to 8 minutes until potato browns a little. Add broth and cook till potatoes are almost tender - 8-10 minutes. Add turkey and cook till thoroughly heated.
You can add cranberries with the turkey. Makes it super good. You can serve this with a poached egg on top as well. Enjoy!
