Introduction

Based loosely on a recipe I found online. I left out the eggs and the maple syrup, and totally changed up the spices. They asked for sausage, but the store had no turkey sausage, so I did this instead. I also forgot to add the mushrooms. Just totally forgot! So add them if you've got them. Ingredients

    Pumpkin, cooked, 1600 grams
    Turkey, Ground turkey, 93% lean, 20 oz
    Olive Oil, 1 tbsp
    Onions, raw, 2 medium (2-1/2" dia)
    Garlic, 3 clove
    White Rice, long grain, 3 cup
    Parmesan Cheese, grated, .5 cup
    Fennel seed, 1 tbsp
    Pepper, red or cayenne, 1 tsp
    Basil, 1 tbsp
    Oregano, ground, 1 tsp
    Thyme, ground, .25 tsp
    Sage, ground, .25 tsp

Directions

Cut the top off the pumpkin and scoop out the innards. Save the seeds for toasted later on, but toss the stem. Bake the pumpkin at 450 for 30 minutes, in a pan with .5" of water in it.

Start the rice as instructed on package.

Meanwhile, saute the onions and garlic in a little olive oil until translucent. Add all the spices and salt and pepper. Throw in the turkey and break up until it is in pieces. When it is nearly cooked, add the mushrooms unless you totally forget like me.

Add the now cooked rice with the cheese, thyme and sage. Adjust seasonings. Take the pumpkin out of the oven and turn it down to 350 and stuff into the now very well cooked pumpkin cavity and top with cheese if desired.

Cook another 40 minutes. Serve while scraping out the pumpkin to mix with the stuffing.
