Introduction
This is a very simple meal that can be for Lunch or Dinner.I usually make this by the pot full, but I wrote the recipe for 2 servings. This is a very simple meal that can be for Lunch or Dinner.

Ingredients

1 Cup uncooked Jasmine Rice (or any rice you like, just keep in mind that Jasmine Rice yeilds 2 cups cooked per 1 cup uncooked)
8 oz lean ground beef
1/2 a can of crushed tomatoes
1 Cup frozen mixed vegetables
Directions
Jasmine Rice takes 20 minutes to cook, but you can just leave it alone. So start with this first. Put 1 1/4 c. water per 1 c. rice in pot. Add rice and turn on high.
When it reaches boiling point, turn down the heat to simmer and cover the pot. Leave it alone for 20 minutes, do not stir or open lid!
In another pot, put ground beef and cook until brown on medium-high. Drain fat and add crushed tomatoes and mixed vegetables. Add seasonings (pretty much any you like) and let simmer until nice and hot or until rice is done.
