Introduction
The recipe was originally for baguettes, but I made it rolls for a dinner party, and they turned out really nicely. I'm personally a fan of the higher crust to dough ratio it creates, so if you like nice crusty baguettes, these rolls are for you. Ingredients

5 c. flour
1 tsp. sugar
1 pkg. (0.25 oz) active dry yeast
2.5 tsp. salt
1.5 c. water
Directions
1. Sprinkle sugar and yeast over water, let stand until foamy (about 5 min.)
2. Add 2 c. flour, and mix until integrated. Add another 2 c. flour and the salt.
3. Knead in remaining flour until dough is smooth and elastic. Cover and let rise until doubled in size (about 90 min.)
4. Punch down and divide into 15 pieces. Shape into rolls and place on floured baking sheet. Preheat oven to 475 and let rise 30 min.
5. Bake 20 min, until slightly browned. Rolls should sound hollow when tapped.
For a really nice, crisp crust, place a dutch oven full of water on the bottom rack of the oven while preheating and leave it in while baking. Do not open oven door while baking.
