Curried Acorn Squash ~ Microwave Cooked to Warm Your Tummy!Autumn is a wonderful food season. Squash are easy to come by and inexpensive. I bought a squash even though I was staying where there was a kitchenette with a microwave. I was not sure how I was going to cook it. But it was easy and the results absolutely delicious. I added honey and low-sodium curry powder and voila!
You do not have to buy special, more expensive curry powder to find a low-sodium variety. Homemade curry powder is simple to make. Simply read all the curry powder labels at your favorite Asian grocery until you find the curry with the lowest sodium count. The Spice Hunter also makes a great curry powder with no added salt.
Substitute stevia or evaporated cane juice for a vegan dish.

Ingredients

Acorn Winter Squash, 1# squash ~ 4" diameter
Honey, 3 tbsp
Curry Powder, 2 tsp
Serrated knife
Cutting board
A container of cling wrap
Directions
Slice both ends off the squash, then cut the squash into four equal pieces. Put the seeds aside for roasting and discard the remaining
In each quarter, pour about two teaspoons of honey. Sprinkle about a half teaspoon curry powder. Wrap each piece individually in cling wrap.
Microwave all four pieces at once for seven minutes on full power. Continue to microwave on 50% power for four to nine minutes. Stop the oven at four minutes and check the squash before cooking it longer.
You can enjoy the squash warm or refrigerate it for a delicious cold, sweet curry treat. Eat one quarter for a small side dish or a full half squash for a more filling dish.
