Introduction
A great breakfast that satisfies my craving for something sweet. Make sure you use healthy whole grain bread. You can use cooking spray to further reduce calories, but the toast tends to stick more if you do. A great breakfast that satisfies my craving for something sweet. Ingredients

2 slices whole grain bread
1 large fresh egg
1 Tblsp olive oil
1/4 tsp pumpkin pie spice or cinnamon (optional)
1/2 cup frozen unsweetened blueberries
Directions
Beat egg with spices with a fork in a large shallow bowl until well mixed
Heat olive oil in a large skillet - medium heat
Place bread in egg mixture and soak until bread is thoroughly covered but not soggy (the lighter the bread, the faster the the bread will saturate, dense bread wlll not soak as quickly)
Place bread slices in heated skillet, cook until egg coating is fully cooked on both sides and lightly browned, turning with a spatula as needed.
Put slices on a on a serving plate.
Microwave frozen blueberries for about one minute until they are warm. Pour berries and their juice over toast instead of syrup.
