Ingredients

2-2.25 pounds Yukon Gold Potatoes (36 oz), diced
.5 cup Sweet Red Pepper, Diced (100 grams)
2 stalks Celery, raw, .diced (.5 cup)
1 medium Onion, diced (280 grams)
3 T Butter
.25 cup All Purpose Flour (15 grams)
10 oz Smoked Pork Sausage, chopped
6 cups Chicken Stock
2 cups Yellow Sweet Corn, Frozen kernels
.5 cup Heavy Cream
Salt, .5 tsp (or according to taste)
Celery Salt, .25 tsp (optional)
Pepper, black, .5 tsp
Thyme, ground, .75 tsp
Garlic powder, .75 tsp
Pepper, red or cayenne, .25 tsp (or according to taste)
Directions
Melt Butter in a stock pot at medium heat.
Add chopped celery, onion & red pepper & saute until onion is translucent. Add flour & cook for approximately 5 minutes, or until flour turns a light golden color.
Gradually add in stock - until fully incorporated with the mix & flour is smooth.
Add sausage and potatoes. Bring stock to a boil.
At boil, reduce heat to a simmer, cover & simmer for 15 minutes. Remove a portion of the potatoes along with stock & process in a blender until smooth. Return to soup pot.
Add corn & seasonings & simmer for another 10 minutes.
Makes 12 1-cup servings.
