Ingredients

    255 grams tofu
    1 green pepper
    1 red pepper
    1 zuchini chopped
    1 cup snow peas
    1.5 can light coconut milk
    1/2 cup basil leaves
    1/2 c vegetable broth
    2-3 kafir lime leaves

    Curry paste:
    1 stalk lemongrass, 1/4 cup coconut milk
    1-3 thai green chilis
    1 c cilantro leaves
    1 inch peice galangal or ginger
    1 T shoyu
    2 T fresh lime juice
    1/2 t ground cumin
    1/2 t fround coriander
    1/2 t ground white pepper
    1 t sucannat
    1/2 t sea salt


Directions

place all green curry paste ingredients in food processor. blend to a paste.

In a wok add small amount of oil and add green curry paste until fragrant. Add tofu.

add stock plus lime leaves. SImmer 5 minutes

Add coconut milk plus veggies and simmer 3 - 4 minutes

Add remainign ingredients, serve topped with basil
