Number of Servings: 10

Ingredients

    1 can of kidney beans
    1 can of white beans (navy or pinto)
    1 can tomato sauce
    1 can mexican style tomato
    1 can white or yellow corn
    1 onion, chopped
    1 T. olive oil
    3 cloves garlic chopped or pressed
    3 -5 shakes of tabasco sauce (to taste)
    3 T. fresh cilantro or 1 T. dried
    3 cups V-8 juice (approximate, to however thick or thin you like your soup)

Directions

Heat olive oil in large pot add onion and garlic and cook until tender, approximately 5 minutes. Add cilantro and tabasco. If using fresh cook until just wilted.

Add all canned ingredients. Finish off with V-8 to desired soupiness. Allow to simmer 15 minutes and serve.

Garnish with cheese or sour cream if desired (but be sure to add that to your calorie count!!)
