Introduction

We have a diabetic in our family, so I used 1/2 sugar and 1/2 Splenda for these soft, toffee-like flourless sugar reduced Peanut Butter Cookies. We have a diabetic in our family, so I used 1/2 sugar and 1/2 Splenda for these soft, toffee-like flourless sugar reduced Peanut Butter Cookies.
Number of Servings: 40

Ingredients

    (Note: I doubled the original recipe and used 1 cup of Splenda and 1 cup of regular sugar.)
    2 cups Peanut Butter
    2 large eggs
    2 cups sugar (here I used 1/2 and 1/2 as noted above)

    You can also add 1/2 tsp vanilla extract if you wish. NOTE: I think 2 cups of sugar makes the cookie too sweet. Next time, I'll probably use 3/4 cup of sugar and 3/4 cup of Splenda.

Directions

1. Preheat oven to 350 degrees or 180 degrees C.
2. Combine ingredients and drop by teaspoonfuls on cookie sheet -

BAKE for 8 minutes

Nutritional info is for 40 medium (about tablespoon sized) cookies, but you can make up to 48 or more bite sized cookies for fewer calories per cookie.
