Ingredients

1 T lemon juice
1 T low-sodium soy sauce
1/2 T honey
2 cloves garlic, crushed
350-400 g chicken breast, boneless, skinless
1 t dill
1 t oregano
1/3 cup fat-free yogurt
1/2 cucumber, peeled
4 Whole wheat pitas, halved
Lettuce, tomatoes, red onion, alfalfa sprouts to top
Directions
Preheat oven to 200�C/400F
Place lemon juice, soy sauce, honey, garlic, oil and 1 clove of garlic into a large bowl. Add chicken and turn to coat.
Place chicken on a baking tray lined with parchment paper and bake for 25 minutes, or until just cooked through. You will need to baste chicken twice during cooking with any extra marinade. (You can also grill on a BBQ or indoor grill)
Meanwhile, combine yoghurt, cucumber, dill and remaining garlic in a bowl. Season to taste with salt and pepper. Stir well to combine.
When chicken is cool enough to handle, slice each piece crosswise into thin strips. Toss with yoghurt dressing, then spoon into pita pocket halves. Serve with lettuce, tomato, red onion, alfalfa sprouts, etc.
