Introduction

Number of Servings: 8

Ingredients

    Corn Tortillas, 6 tortilla, medium (approx 6" dia)
    Kraft cheddar, shredded, fat free, 1 cup
    Low Sodium Tomatoes, canned, 2 cups
    Low Sodium Black Bean Chili, 4 servings (recipe listed on site)
    Granny's Enchilada Sauce, 8 serving (recipe listed on site-- ___thank you, MSCAT3851!)

Directions

Spoon salsa in the bottom of a round 8 in cake pan. Add a tortilla. Sprinkle some cheese and chili. Repeat until all six tortillas or covered, much like a lasagna.

Bake at 375 degrees for about 35 to 45 minutes. Can be served with plain Greek yogurt (or sour cream), but not included in nutrition.

Serves 8 and reheats beautifully in microwave.
