Note: The sodium will be less than nutritional data shows if you rinse and drain beans and hominy and use no salt diced tomatoes. You could also use vegetable broth in place of water and vegetable bouillon cubes. Adjust accordingly.

Ingredients

    1 medium onion, diced
    3 cloves garlic, minced
    1 large carrot, diced
    1 rib celery with leaves, diced
    2 cups thinly sliced cabbage (1/4 small)
    1 cup canned diced tomato (no salt)
    5 cups water
    2 vegetable bouillon cubes (no salt)
    1 tsp kosher salt
    1 (15.5 ounce) can Goya Canary Beans, rinsed and drained
    1 (15.5 ounce) can white hominy, rinsed and drained
    3/4 tsp freshly ground black pepper
    1 cup peeled diced potato
    2 Tbsp minced cilantro


Directions

In Dutch oven or soup pot, saute onion with a little water until brown about 5 minutes. Add garlic, carrot, celery and saute 3 minutes. Add water, tomato, bouillon cubes and salt. Bring to boil. Add hominy, canary beans, potatoes, and pepper. Reduce heat to low and simmer 15 to 20 minutes. Stir in cilantro. Serve with crusty bread or toast, if desired.
