1 dozen Egg-Land’s Best Eggs
2 cans of beets or 2 cups beet juice
Juice from ½ fresh lemon
1 teaspoon sugar
Pinch salt

Directions:
Bring 2 quarts of water to a boil (no salt) place room temperature eggs in boiling water, (if eggs are fresh from the store add 1 teaspoon baking soda) turn off heat and let sit covered for 15 minutes. Cool eggs down by running under cold water until chilled. Peel cooled eggs and place in container, pour beet juice (if using canned beets, save them for another meal) over eggs add lemon juice and sprinkle sugar and pinch of salt over them and place in the refrigerator. Eggs should be covered by beet juice; eggs will absorb the purple goodness in one or two days. This is a tasty snack for kids and they love the purple color, adults seem to enjoy them too and they look awesome on a salad.
