This healthy and high protein omelet is baked in muffin tins! The batter can be stored in the freezer to thaw and cook later or cook them and have handy for reheating. Ingredients

    16 oz Non fat cottage cheese
    6 large Egglands Best Eggs
    4 egg whites
    1/4 cup lowfat buttermilk
    1/4 cup wheat flour
    1 tsp baking powder
    1/4 tsp salt

    1.5 cups shredded Colby Jack cheese
    4 T bacon bits
    1/2 cup salsa
    3/4 cup steamed broccoli (finely chopped)

Directions

1. Preheat oven to 350 degrees F, spray muffin tin with fat free cooking spray.

2. Mix first 7 ingredients in a blender until smooth.

3. Stir in shredded cheese, bacon bits, salsa, and broccoli pieces.

4. Pour (3/4 full) into muffin tin and bake for 12-15 minutes (until lightly browned).

Makes 12 medium sized muffins.
